My wife made this recipe up and we have gotten many compliments on it, even from our meat-eating friends/family! Please note, you will need a large crock pot for this recipe.
Ingredients:
1 32 oz brick pack of Pacific Natural Foods Brand Organic Creamy Tomato Soup
1 12 oz package of Lightlife Brand Smart Ground Original Veggie Protein Crumbles
2 6 oz cans of organic tomato paste
2 15 oz cans of organic tomato sauce
1 15 oz can of organic black beans
1 15 oz can of organic red kidney beans
organic chili pepper
onion powder
garlic powder
sugar/salt (as needed)
black pepper (no set amount...just to taste)
Directions:
Place veggie protein crumbles in crock pot and break up into fine crumbles (they come in a vacuum sealed pack so they are rather lumpy to start with) until it looks like ground beef would look once fully cooked. Pour in all ingredients except for spices. Stir well and turn crock pot to high. Cook and stir until the tomato paste is fully broken down in the liquid. Once the chili is boiling, turn the heat to low. Once it is cool enough to taste, begin adding your spices to taste. If the chili is too acidic, add sugar. If the chili is too sweet, add salt. Easily serves 4-6 people.
