It slows down the ripening process, and, when you take them out, they go rotten very quickly. One little tip to speed the ripening, if you can’t wait to get your teeth into them – is to put them in a paper bag alongside a ripe banana, apple, and/or tomato – it really works. It’s because all these fruits (including the Avocado too), give off Ethylene gas, a gas which accelerates ripening, especially when trapped inside a paper bag.

We’re so used to being told that fat is the heart’s worst enemy that it may come as something of a surprise to be told that the high fat content in Avocados is actually good for our hearts! What it boils down to is that the fats that are bad for our hearts are saturated fats. They leave fatty deposits inside your veins, which makes your heart have to work harder to the keep blood circulating freely. The saturated fat content of Avocados is however quite small, and far outweighed by the presence of more beneficial fats such as Oleic Acid which accounts for over half of the fat an Avocado contains.
