Chipotle Turkey Chili
Ingredients:
1 pound ground turkey
1 red bell pepper, diced
2 green bell peppers, diced
1/2 large onion, diced
1 can black beans, drained
1 can kidney beans, drained
1 small can chipotle peppers in adobe sauce, peppers chopped
1 can fire roasted diced tomatoes
1/2 can light beer (optional)
olive oil
Directions:
1) In a large pot, heat a bit of olive oil over medium heat. Add the ground turkey and cook through, approximately 10 minutes.
2) Once ground turkey is cooked, make room in the middle and add the peppers and onion. Saute vegetables until peppers are slightly soft and onions become translucent, approximately 5 minutes.
3) Once turkey and vegetables are cooked, add the drained cans of beans and can of tomatoes (with juices). Also add chipotle peppers, as well as all of the adobo sauce from the can.
4) Stir all ingredients together, and allow to cook over medium until bubbling. If you want to add the beer (this will add flavor, but leaving it out will save some calories) add it now.
5) Bring heat down to low-medium and allow chili to simmer for approximately an hour before serving.
6) Try topping with green onions or fat free sour cream.
