Cucumber Salad
You'll Never Guess How Healthy This Salad Is. Nor Will Your Guests!
Ingredients:
2 Medium cucumbers
1 shallot
1/2 teaspoon salt
1/4 cup of plain rice wine vinegar
1 solid dash of Tabasco
1 1/2 Tablespoons chopped fresh Coriander (Parsley is NOT an option)
Directions:
Peel and cut cukes in two lengthwise. Seed with a pointed spoon, discard. Cut cukes in uniform thin slices. Finely chop shallot. Put this in a deepish bowl with narrow sides. Mix the rest of the ingredients, except for coriander, and pour over the cukes. Add the coriander. Stir to coat. Tightly cover the bowl and leave for at least a day; 2 is better. Divine with Thai curry but really good with anything that you would eat cucumber with.
No cooking, no calories (to speak of), and delicious.
