Healthy Cooking Recipe 5: Chicken Fajitas



















Chicken Fajitas
Ingredients:

Salsa:

3 large organic tomatoes chopped**

1 small bunch cilantro chopped

1 medium onion chopped

1 jalapeno pepper finely chopped

4 cloves garlic finely chopped

juice of one lime

Mix all ingredients together. Salt to taste. Set aside.

Ingredients for Fajitas:

3 pieces skinless, boneless, organic chicken**

2 organic red peppers, cut in strips**

1 organic yellow pepper, cut in strips**

1 poblano pepper, cut in strips

1 large onion, sliced

½ teaspoon garlic salt

½ teaspoon paprika

½ teaspoon sugar

¼ teaspoon chili pepper

1 tablespoon hot sauce

juice of 2 limes

2 cloves garlic, chopped

6-8 whole grain tortillas

shredded low-fat organic cheddar cheese**

low fat organic sour cream**

lettuce

Cut chicken into strips and brown on both sides. Remove from pan and set aside. Saute peppers and onions.* Add chopped garlic. When vegetables are tender, add chicken back into pan. Add spices and lime juice and continue cooking 2-3 more minutes. Wrap tortillas in tin foil and heat in oven for 10 minutes or until soft and warm.

Place ingredients in warm tortilla. Add lettuce, cheese, sour cream and salsa. Serves 4.
