Ingredients: 1 cup cooked organic jasmine rice** 2 cups rice milk 2 organic free-range eggs** ¾ cup turbinado sugar or sugar substitute Liquid Stevia** 1 teaspoon cinnamon ½ teaspoon nutmeg 2 tablespoons vanilla extract ¼ cup raisins ¼ cup sliced almonds
Pre-heat oven to 400 degrees. Mix the eggs, ½ cup of the milk, cinnamon, nutmeg and vanilla together in bowl and set aside. Mix rice together with remainder of milk and sugar in saucepan and simmer over high heat for 15 minutes or until mixture starts to thicken. Remove from heat and slowly add 1 tablespoon at a time to egg mixture. If the rice mixture is added too quickly it will cook the egg. Mix in raisins and almonds. Put new mixture into a greased baking dish and bake for 30-40 minutes. Remove from oven and allow to cool. Place servings in dessert dish and stir in either a little sour cream or milk to make it creamy. Top with whipped cream. Serves 4.
