Healthy Cooking Recipe 7: Black Beans and Chicken



















Black Beans and Chicken
Ingredients:

2 cups black beans (soaked in water overnight)

2 pieces skinless, boneless, organic free range chicken**

1 can chopped green chilies

½ teaspoon paprika

dash of chili pepper

dash of salt

chopped organic tomatoes**

low-fat organic sour cream**

shredded low fat organic sharp cheddar cheese**

Rinse and place beans in pot with enough water to cover beans and cover with lid. Simmer over medium to high heat for 1 hour or until beans are tender. Pre-heat oven to 350 degrees. Butterfly chicken and cover both sides with spices. While the beans are cooking, sear chicken on both sides in skillet. Place each piece of chicken in a piece of tin foil. Seal foil and bake in oven for 30-40 minutes. Serve chicken with desired amount of beans on top. Add desired amounts of cheese, sour cream, chopped tomatoes and chilies. It’s also good with a little of your favorite hot sauce on top. Salt to taste. Serves two.
