Healthy Cooking Recipe 8: Spinach Lentil Soup
4 Scallions (chopped) 2 cloves of Garlic (chopped) 2 tbsp. Olive Oil 1 cup Lentils 4 cups Chicken Broth * 1 lb. Spinach * ½ tsp. Cumin
Sautee scallions and garlic in Olive Oil for 2 minutes. Add Lentils and Chicken Broth, bring to a boil then reduce heat and simmer until lentils are soft (approx. 40 minutes). Add Spinach and Cumin, cover and cook for 5 more minutes.
