Healthy Cooking Recipe 9: L.A. Granola Balls with Dates
Ingredients: 1 cup toasted Almonds* ¾ cup chopped Dates ½ cup raisins ½ cup filtered water 2 tbsp. Raw, unprocessed peanut butter 1 tsp pure Vanilla 2 cups Granola In a grinder or food processor, grind toasted Almonds until very fine. Place in a bowl. Combine Dates, Raisins, and Water in a saucepan and heat until mixture comes to a boil. Remove from heat and let rest for 10 minutes for fruit to soften. When mixture has cooled to warm, place in blender or food processor and blend until smooth. Add peanut butter, vanilla and granola, and then form into balls. Roll in bowl of ground almonds. Serve immediately or store in the refrigerator or freezer. *You can mix in flax seed with the toasted Almonds and make it an extra healthy snack!
