Healthy Cooking Recipe: Healthy Food

“Food is our common ground, a universal experience.”

I have never been much of a cook so the idea of coming up with a healthy cooking recipe was beyond me. In the past Recipes were just not for me. I didn’t always eat balanced meals; I just grabbed some healthy and semi-healthy foods on the run and called it a day.

But, recipes are now an important and integral part of my daily life and I have learned to enjoy introducing new ones or modifying old ones, getting the creative juices going. I may even consider signing up for some healthy cooking classes!

The value of cooking with recipes is that they keep you balanced. That is, they make sure that at the end of your effort you have ended up with a complete balanced meal that will work towards keeping you healthy. I actually feel a rush when I eat super healthy, and using my favorite recipes helps me prepare balanced meals and be in control of my daily intake of healthy foods. Therefore, after years of trial and error, I have finally overcome my lack of discipline to control what and how I choose to eat by using recipes.

First, I must confess to my love affair with blueberries. I can eat those little fellows until the cows come home. Blueberries are not only a super food, chock full of vitamins, minerals and antioxidants, but when I pick them myself from an organic farm they are so sweet they melt in your mouth.

There are other foods that I love and try to incorporate into my recipes as often as possible. Do you know that entire books have been written about how to cook the humble potato? And how many others have been written about the different ways to cook chicken?

I don’t normally eat beef, I try to stay with chicken, turkey and fish whenever possible, but I do have weakness for filet mignon which is really a sirloin steak. This is good, because if you are going to eat beef or pork you should make sure that the name of the cut of meat ends in loin -- the leaner cuts.

I must also confess that I don’t always enjoy all the vegetables on my healthy food list, but I do my best to cook them in an attractive and tasteful way so I make sure to eat them once on my plate. For instance, I am not a fan of spinach, never was! In fact, my mother devised a plan to make sure I ate it by asking us to dress up, pretending we were sitting at a restaurant and dining by candlelight. The reason for the candlelight’s was so we couldn’t see the spinach that she had put in our milkshakes which were dark green in color! The measures of a desperate mother to provide good nutrition for her children….what can I say….

I don’t rely on such tactics, of course, because really it’s not that easy to fool one’s self. But what I do instead is just make sure that I include a variety of healthy vegetables and fruits to create a rainbow of colors on my plate. I feel that the eyes must be pleased with the food presentation; it is an integral part of enjoying your meal.

I would like to share with you some of my favorite healthy cooking recipes. Some of them I have created myself, others have been “invented” by friends and relatives and others I have gotten from books and the Internet and modified them to please my palate. Feel free to use them. I hope that you will find them appealing and that if you decide to modify them let me know, I might just like to incorporate the change into mine.
