Healthy Hot Pasta Salad
Ingredients:
6 anchovy fillets, chopped
6 tomatoes, peeled and thinly sliced
1 clove garlic, peeled and crushed
8oz/225g whole grain pasta twists
2oz/50g butter
2oz/50g Parmesan cheese
1 tablespoon dried oregano
salt and pepper
Directions:
Put anchovies, tomatoes and garlic into a serving dish. Cook pasta in a large saucepan of boiling water until just tender (about 10 mins), then drain. Melt butter in saucepan until frothy, add pasta and toss well. Stir in tomato mixture and season. Sprinkle with Parmesan cheese and Oregano. Time 8 mins preparation. 14 mins cooking. This is delicious with chicken also. This salad can also hold its own as a tasty lunch. Tip: to prevent the butter burning add 1 teaspoon of oil to the pan before melting.
