by Ted "ChickPea" Cooper

Are you tired of serving your drop-in guests unhealthy salty potato chips and dip? Why not serve them more tasty nibbles? Roasted chickpeas based on a recipe derived from the Mediterranean will hit the spot? Only the few steps below will produce a hearty healthful offering.

Open a nineteen ounce can of chickpeas, drain them and then dry with a paper towel. In a medium sized bowel combine and mix the chickpeas, two tablespoons of extra-virgin olive oil, one half teaspoon of salt, a pinch of ground pepper and one half teaspoon of oregano. Arrange this mixture in a single layer on a rimmed baking sheet and cook at three hundred degrees until they are browned and slightly crisp. This should take about fifty minutes. Serve the roasted chickpeas to your guests at room temperature. They will love them and appreciate a snack that comes from one of the healthiest diets in the world.

When you use this recipe you not only will make a healthy Mediterranean diet snack, your guests will appreciate your creativity and thoughtfulness.
