Italian Sausage Pasta


Ingredients:

1 16. oz package whole grain linguine

1 lb Sweet Italian turkey sausage

1 tbsp. minced garlic 1/3 of a medium yellow onion, chopped

1 can reduced sodium diced tomatoes

1/2 yellow or orange bell pepper, cut in small slices

1 cup fresh baby spinach leaves, chopped

Directions:

Prepare vegetables as directed above. Bring water to boil in a large pot. While water is heating, add Italian sausage to a large skillet and brown over medium heat. Once the water in the pot is boiling, add salt and linguine and cook according to directions. When the sausage is nearly done, add the garlic, onion, and pepper. Continue to cook the sausage until no pink remains. Add the can of diced tomatoes and spinach to the sausage. Once the mixture is simmering, reduce heat to low. Once cooked, drain linguine, then add it to the skillet. Toss together and heat through over low heat for one minute. (If your skillet is too small, mix everything in the pot instead.) Makes 4 adult servings. Total cook time: about 25 minutes
