Italian-style Spinach and Mushrooms


Ingredients:

5 oz. organic spinach roughly chopped

5 to 7 mushrooms, sliced (Baby Bellas are especially nice, but button mushrooms work fine too)

3 cloves of garlic, crushed and minced

1 Tbs white or red wine vinegar

1/4 cup white wine or water

2 Tbs olive oil

1/4 Tsp sea salt

Directions:

Place olive oil in a saute pan over medium heat. Add mushrooms and cook for 3 to 5 minutes. Add garlic and continue to cook for a couple of minutes until the garlic starts to brown. Watch carefully, garlic burns quickly and burnt garlic smells and tastes horrible! Once garlic has begun browning, add the spinach, vinegar, salt, and wine or water. Cook until wine or water gets absorbed.
Serves 2 as a side dish
