Steamed Idlis

Ingredients:

3 cups rice

1 cup split black gram

salt to taste water

Directions:

1. Soak rice and split black gram separately for 8-10 hours.

2. Make a batter of rice and split black gram in a grinder. The batter should be thick and the texture should not be very smooth nor very grainy.

3. Put salt in the batter and keep it aside to ferment. Time taken to ferment depends on the climate. The batter will rise when it starts to ferment. Refrigerate the batter when it has fermented.

4. If you have a cooker then you can steam idlis in it. Take small bowls and grease them with oil. Put some batter in the bowls and similarly fill as many bowls as you can accommodate in your steam cooker. You can use any deep pan you have for steaming idlis. It takes about 10-12 minutes to cook.

5. Remove the idlis from bowls and they are ready to serve.
