What are you doing with those beans, my daughter asked with a suspicious tone. This question was quickly followed by, why are you mixing beans and cacao. Right off the bat I could tell she was planning to dislike this dip, after all, who heard of mixing these two so oddly different ingredients. Actually, I was wondering the same thing myself; this was definitely an experiment on my part. Got to tell you, though, we all love this crazy dip in our family, and it is one of the easiest dips to make.
- 2 cups cooked white beans
- Liquid from the cooked beans
- 1 Tablespoon of Coconut Oil
- 8-10 dates soaked overnight
- 2 tablespoons Raw Cacao
Soak white beans overnight. Rinse and cover with water. Bring to a boil and simmer until done. Remove beans from stove and drain, reserving some of the liquid in case you need it. Let the beans cool. Place all ingredients in a blender and blend or food processor until smooth.
Serve with pretzels, apple slices, banana chunks or just about anything you like. Scoop and enjoy, sweet and delicious.
You can go crazy with this recipe try adding almond butter, coconut oil or vanilla just be creative your kids will love it.
