This Veggie-Stuffed Zucchini Recipe Is A Vitamin Boost For Your Whole Body
Zucchini is the new lettuce, in this fun salad recipe. 2 zucchini, halved, flesh scooped out
1 white onion, chopped
1 eggplant, chopped
1 large bell pepper, chopped

2 tablespoons extra-virgin olive oil
Preheat your oven to 400°F.
While your oven preheats, heat ½ tablespoon of olive oil over medium-high heat on the stovetop. Cut and sauté your onion, eggplant, and pepper until tender, about 5-7 minutes. Season with salt and pepper while cooking.
Drizzle a baking dish with a ½ tablespoon of olive oil and place the halved and emptied zucchini in the dish, skin side down.
Fill your zucchini boats equally with the veggie mixture. Drizzle the remaining olive oil (1 Tbsp).
Bake until zucchini is tender, about 20-25 minutes.
