This Veggie-Stuffed Zucchini Recipe Is A Vitamin Boost For Your Whole Body

Zucchini is the new lettuce, in this fun salad recipe. With strong health benefits and a mild flavor, this zucchini-boat veggie recipe is the perfect side to any protein-heavy meal, or even just great on its own as a snack.Using zucchini as the boat to carry other vegetables into your body is fantastic. An outstanding source of manganese and vitamin C, zucchini also packs in the vitamin A, magnesium, folate, potassium, copper, and phosphorus. And with just 7 ingredients, this fun salad-boat is easy to make.

Float On

A mix of sautéed veggies fills the zucchini canoe you will soon create. These veggies offer a mix of benefits, like phytochemicals, antioxidants, and minerals that keep your stomach happy and healthy.


2 zucchini, halved, flesh scooped out

1 white onion, chopped

1 eggplant, chopped

1 large bell pepper, chopped

2 tablespoons extra-virgin olive oil




Preheat your oven to 400°F.

While your oven preheats, heat ½ tablespoon of olive oil over medium-high heat on the stovetop. Cut and sauté your onion, eggplant, and pepper until tender, about 5-7 minutes. Season with salt and pepper while cooking.

Drizzle a baking dish with a ½ tablespoon of olive oil and place the halved and emptied zucchini in the dish, skin side down.

Fill your zucchini boats equally with the veggie mixture. Drizzle the remaining olive oil (1 Tbsp).

Bake until zucchini is tender, about 20-25 minutes.
