The fermentation process has been around for centuries, dating back to civilizations as old as ancient Greece, China, and Europe. However, only a select few individuals still use and fully understand the fermentation process and its importance.
Fermentation is the natural breakdown of a substance by bacteria, yeasts, or other microorganisms. To simplify fermentation is the process of creating probiotics.
What Are Water Kefir Grains?
Water kefir, much like dairy kefir, is a fermented food substance packed with probiotics. However unlike dairy kefir grains water kefir grains are not actually grains at all. Water kefir grains are actually bacteria and yeast that exist in a symbiotic relationship. Water kefir grains are described as grains simply because of their appearance.
Water kefir grains also differ from dairy grain in their physical appearance. Dairy grains usually have a white color, and tend to clump together during their fermentation process in whole milk.
Unlike dairy kefir grains, water kefir grains do not clump together, and are clear or translucent. They often take on the color of the beverage or type of sweetener used in the culturing process.
How To Make Water Kefir.
What You Will Need.
- 1 Pot
- 1 half gallon mason jar
- 1/3 of a cup of raw organic sugar
- 6 cups of water
- 1/3 of a cup of water kefir
- 1 tea towel
Place a pot with one cup of water on the stove and heat. Next dissolve 1/3 of a cup of raw organic sugar in the heated water. Allow this solution to cool, then add 3 cups of water to the pot.
Pour this mixture into a 1/2 gallon mason jar. Next add another 1 and 1/2 cups of water to the jar and slowly add in the 1/3 of water kefir. Now cover the mason jar with a tea towel and secure with a rubber band.
Leave this solution in a warm place to culture for 24 to 72 hours. The longer you leave it, the less sweet it will be as the grains will develop by eating the raw organic sugar.
Taste the water kefir each day to see if the it has reached your desired level of sweetness. Once it has, strain out the grains by placing a plastic strainer over another mason jar and pouring the kefir through it.
While water kefir does provide many health benefits it can still be enjoyed as sweet dessert or as a delightful snack. Not only will it taste great your stomach will thank you for the probiotic boost.
